Spicy Peanut Noodles
INGREDIENTS
1 lb fettuccine
2 Tablespoons olive oil
4 cloves minced garlic
1 1/2 cups chicken broth
1/2 cup smooth peanut butter
6 Tablespoons rice vinegar
2 Tablespoons soy sauce
4 teaspoons grated fresh ginger root
2 teaspoons brown sugar
4 scallions, sliced
2 1/2 teaspoons crushed red pepper flakes
Cilantro (optional)
DIRECTIONS
1. Prepare fettuccine, drain, rinse
2. In a large skillet heat oil over medium high heat. Add
garlic: cook, stirring constantly for 30 seconds
3. Stir in chicken broth, peanut butter, rice vinegar, soy
sauce, ginger, brown sugar, scallions and red pepper, and
bring to a boil.
4. Reduce heat, and allow sauce to thicken, stirring constantly
for approximately 15 minutes.
5. Add fettuccini and mix well, and transfer to a serving
bowl.
6. Garnish with cilantro (optional)
Aunt Haydee's Amazing Lemon Cake:
EGG Mixture
- 2 3/4 cups sugar
- 1 cup corn oil
- 3 large eggs
- 1 1/2 tsp citrus oil
- 1 tsp almond extract
FLOUR Mixture
- 3 cups flour
- 2 tsp poppy seeds
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1 1/2 cups milk
1. Fold egg mixture, flour mixture, milk, alternating, finish
with flour
2. Butter & flour bundt pan
3. Bake 350 degrees 1 hour
4. Cool
5. Glaze w/ 1 cup confectioners sugar, 1/3 cup orange juice,
1/2 tsp citrus oil, 1/2 tsp almond extract
Cinnamon Butter (easy and delicious!)
- 1/2 lb butter
- 1/2 lb sugar
- 3 Tablespoons cinnamon
- Mix using a hand mixer then re-chill
